Easy Dinner Recipes for Two

Macaroni: 2 cups
Tuna: 1 can
Garlic: ½ tsp
Onion: (chopped) 1
Margarine/butter: 2 tbsp
Campbell’s Cream of Celery Soup: 1 can
Cream cheese: 1 small pack
Dry mustard: ½ tsp
Grape nuts: ¼ cup
Milk: ¼ cup
Green Peas: ½ cup
Method of Preparation
Cook the macaroni as per the instructions on the package and keep it aside. In a casserole dish, add cream of celery, softened cream cheese and milk, and mix well until smooth. Next, add the tuna, garlic, dry mustard, onion and cooked macaroni, and stir well. Add grape nuts and green peas to the melted margarine and spread this mixture over the top of the casserole. Finally, bake the dish in a preheated oven at 375°F for 40 – 45 minutes, and serve.
Slow Cooker Ribs

Ingredients
Pork baby back ribs: 4 pounds
Brown sugar: ½ cup
Ketchup: 2 cups
Vinegar: 4 tbsp
Chili sauce: 1 cup
Hot sauce: 1 dash
Dried oregano: 2 tsp
Worcestershire sauce: 2 tsp
Salt and pepper: to taste
Method of Preparation
Season the ribs with salt and pepper. Put them in a shallow baking pan. Brown the ribs in a preheated oven for 15 minutes at 400°F. Now turn them over and brown the other side of the ribs for the same time, and drain the fat. In a mixing bowl, combine the ketchup, chili sauce, brown sugar, vinegar, oregano, Worcestershire sauce, hot sauce, salt and pepper. Transfer the ribs to a slow cooker, pour the sauce over the ribs and coat them well. Cover and cook for 7-8 hours until the ribs are tender.

Ingredients
All-purpose flour: 3 cups
Unsalted butter, softened: 10 tbsp
Grated lemon peel: 1 tsp
Baking soda: ½ tsp
Blueberries: 1½ cups
Plain yogurt: 1½ cup
Sugar: 1 cup
Large eggs: 2
Baking powder: 1 tbsp
Salt: ½ tsp
Flour (if using defrosted frozen berries): 1 tbsp
Method of Preparation
Whisk the flour, baking powder, baking soda and salt together. Keep it aside. Mix butter and sugar together in another bowl until it gets fluffy. Add the eggs and beat well along with the grated lemon peel. Now add the dry ingredients and yogurt to the bowl and beat well. Fold in the berries. If using frost berries, defrost them, remove the excess liquid and coat them in some flour. Take a muffin pan and coat each cup with oil or butter.
Pour the muffin dough into each cup and bake in a preheated oven at 375°F for 30 minutes. Insert a long toothpick into the center of the muffins to check whether they are baked or not, and if the toothpick comes out clean, it means the muffins are ready. Remove the muffins from the cups and serve warm.
